A very belated happy new year to you and your family! I hope January has been treating you well and the year has got off to a good start. In the last few weeks I have been focusing on getting back into the swing of things and planning food to cook and eat. Below is a recipe for a very easy and heartwarming beef stew, that I thought I would share with you, to keep the cold outside!
Warming Beef Stew
500g Beef (cubed), doesn’t need to be the best cut as it is going to cook for a few hours!
80g Smoked bacon lardons
1.5Tbsp Gluten free flour
Handful mixed herbs
2x Parsnips (peeled & cut into chunks)
2x Carrots (peeled & cut into chunks)
2 or 3x Potatoes (peeled & cut into chunks)
1x Pack of button mushrooms
250ml Red wine
500ml Beef stock (or enough to cover ingredients)
80g Smoked bacon lardons
1.5Tbsp Gluten free flour
Handful mixed herbs
2x Parsnips (peeled & cut into chunks)
2x Carrots (peeled & cut into chunks)
2 or 3x Potatoes (peeled & cut into chunks)
1x Pack of button mushrooms
250ml Red wine
500ml Beef stock (or enough to cover ingredients)
Pop everything in an oven proof dish and into the oven with a lid on at Gas Mark 3 / 325F / 170C for 2 hours stirring occasionally. Then remove the lid and cook for a further hour to thicken the sauce. (Or pop into a slow cooker and leave to cook all day while you are at work or out walking!) Enjoy with your green veg of choice and I love mashed swede!
